Im 2/3rds a way through the challenge!
So I was trying to think of new ways to use okra and googled a few recipes. I heavily modified one to make it easy and vegan and it turned out rather yummy!
1/2 cup boca veggie crumbles 70cal
1 cup okra 52cal
1/4 cup daiya mozerella shreds 90cal
Its suuuper yummy! And aside from the okra, everything is one serving size, but combine they made a pretty filling meal!
Next time I think I’ll mix in the half cup brown rice(115 calories).
