I’ve gained a few pounds, and money is getting a little tight for me.
I’ve been dipping into my savings a bit this month, but a lot of expenses have popped up.
And not helping either cause is all the eating out I’ve been doing, not necessarily eating healthy bento! Eek!!!
So I’m renewing my commitment! I’m tempted to do another 30 days of vegan bento challenge, but I doubt I can keep that up on weekends, at least for right now.
Anyway today’s lunch bento!
Mashed potatoes, peas, pistachios, and dried fruit.
I realized afterwards I didn’t add any protein but I’ll probably be eating lots of gluten for dinner if Jon picks Viet Taste, so no worries right now. I also have a honey crisp apple for a snack too!
