This enchilada features Gardein Chick’n strips and Daiya Vegan Pepperjack Shreds. Alongside the enchilada are the rest of my refried beans and baby carrots.
It’s nothing special to look at, but it’s yummy!
Side note, our Gurren guest writer is the one whom made these enchiladas. She came over and we had a blast making and eating these!
