Because my weekly review was done at home today, I kept letting myself get distracted and it took about five hours to accomplish what I have been accomplishing in two, previously. This is why I love coffeeshops. Maybe once I get my minimalist room in order, I’ll be set.
Anyway, so this bento was a little bit rushed, but not so much that I couldn’t take decent photos. This bento featured Uncle Ben’s Ready Rice: Garden Vegetable, Gardein Beefless tips, baby carrots and broccoli covered in Daiya Cheddar Shreds.
It’s not the gold standard in healthy meals, but it’s okay. I’m getting a bit fatigued as I hit 30 days of vegan bento meals with no days off. Once the challenge is over, I’ll likely go to a five post a week format, as opposed to daily. Then it’s a bento every week day. Or if I dropped to only three or four that would leave wiggle room for packing a soup for lunch here and there, days off of work, and nights where I simply throw food in a box and it looks like a hot mess. I don’t know, what do you think?
