I went to my grandma’s earlier this week, and this ended up being my bento yesterday. Leftover handmade pizza with heirloom cherry tomatoes, garlic chives, basil, sauteed mushrooms, peppers, and onions, all topped off with Daiya vegan mozzarella.
It was one of the best pizzas I think I’ve ever had, in general. The crust was fluffy but not gooey from being under-cooked, it wasn’t tough from being overdone. This pizza was “on-fleek.”
