This was the bento I made for the earlier half of the week. Granted, I should have taken the photo Sunday as opposed to Wednesday, because it would have looked way fresher and yummier, but here we are with my procrastinating and meal-planning self. I even have to leave for work in 3 minutes. *yanks curtain back into place*
This bento features Morningstar’s vegan chick’n strips with sauteed lima beans and brussel sprouts from the farmer’s market.

The coupons and deals that I share are all vegan products that I personally enjoy. If I don’t think it’s a good product, I simply won’t share it with the exception of a few things.
I live in a weird place where we tend to be late in the game to get new products. If I see a coupon for something such as an organic tofu brand that I haven’t seen in the area, I will share it but put the caveat that I haven’t tried it yet.
If it’s a coupon for a product that could potentially not be vegan(such as $1 off any Morningstar product) I will specify and make a recommendation for my favorite vegan products by that company.

If it isn’t obvious from the name, I am a huge fan of anime including Gurren Lagann. I obsess about a lot of things, and making bento boxes happens to be one of them.
During the month of January, I will be contributing to the 30 day bento challenge. Also, I plan to record my weight loss during that month for those of you who are considering veganism as a form of weight loss. I am 5’2″ and I plan to drop about 100 lbs. total. I know that seems like a lot, but I have been doing well on the vegan diet so far. I started gearing my vegan diet towards weight loss about two weeks ago, and I have lost 12 lbs. I will be posting pictures of my bento boxes and keep everyone updated on my weight loss journey! After I have made some progress, I also hope to post a few before and after photos along the way.
